A simplified version of the traditional Bánh Da Lợn, this recipe uses pre-made pandan paste and reduces the number of steps for a quicker preparation while retaining the characteristic layered appearance and chewy texture.

- Pandan paste3 tbsp
- Tapioca starch120g
- Rice flour40g
- Mung beans (pre-cooked or canned)150g
- Coconut milk350ml
- Sugar180g
- Salt1/2 tsp
- Water150ml

Prepare the white layer: Mash the pre-cooked mung beans. Mix with 100ml coconut milk, 40g sugar, and a pinch of salt. Cook over low heat until slightly thickened. Set aside.

Prepare the green layer batter: In a bowl, combine tapioca starch, rice flour, 140g sugar, and a pinch of salt. Gradually whisk in the remaining 250ml coconut milk and 150ml water until smooth. Stir in the pandan paste until evenly colored. Strain the batter.

Steam the layers: Grease a square steaming pan. Pour a thin layer of the green batter and steam for 5 minutes. Add a layer of the mung bean mixture and steam for 5 minutes. Repeat layering green batter and mung bean mixture until all batter is used, steaming each layer until set. Total steaming time around 40-50 minutes.

Cool and cut: Allow the cake to cool completely before cutting into portions.
