- Tapioca starch1/4 cup
- Turmeric powder1/2 teaspoon
- Water1.5 cups
- Salt1/2 teaspoon
- Ground pork1/2 lb
- Shrimp, peeled and deveined1/4 lb
- Shallots, minced2 tablespoons
- Garlic, minced1 teaspoon
- Fish sauce1 tablespoon
- Black pepper1/4 teaspoon
- Scallions, chopped2 tablespoons
- Vegetable oilfor cooking
- Fresh cilantro, for garnishto taste
- Red chilies, thinly sliced, for garnishto taste

In a bowl, whisk together rice flour, tapioca starch, turmeric, salt, and water until smooth. Let batter rest for 15 minutes.

In a separate bowl, combine ground pork, chopped shrimp, minced shallots, minced garlic, fish sauce, and black pepper. Mix well.

Heat a lightly oiled non-stick skillet or crepe pan over medium-high heat. Pour about 1/4 cup of batter into the pan, swirling to create a thin, even crepe.

Cook for 1-2 minutes until the edges start to lift and the bottom is golden.

Spoon about 1/4 of the pork and shrimp mixture onto one half of the crepe.

Fold the other half of the crepe over the filling to create a half-moon shape. Cook for another 2-3 minutes until the filling is cooked through and the quesadilla is golden brown and crispy on both sides.

Remove from pan, garnish with chopped scallions, fresh cilantro, and sliced red chilies. Repeat with remaining batter and filling.
