  • Chicken thighs400 g
  • Miso paste (red or mixed)4 tbsp
  • Gochujang (Korean chili paste) or chili paste1-2 tbsp
  • Garlic2 cloves, minced
  • Ginger1 tsp, grated
  • Sesame oil1 tbsp
  • Ramen noodles4 servings
  • Eggs4
  • Bean sprouts1 cup
  • Corn kernels1/2 cup
  • Green onions1/4 cup, chopped
  • Wateras needed
  • Saltto taste
  • Black pepperto taste

    Boil chicken thighs in water until cooked through. Remove, shred, and set aside. Reserve the chicken cooking liquid.

    In a pot, heat sesame oil. Sauté minced garlic and grated ginger until fragrant.

    Add chicken broth and reserved chicken cooking liquid to the pot. Bring to a simmer.

    In a small bowl, whisk together miso paste and gochujang with a ladleful of the hot broth until smooth. Stir this mixture back into the main pot.

    Add ramen noodles to the simmering broth and cook according to package directions.

    While noodles cook, soft-boil eggs.

    Add bean sprouts and corn kernels to the pot during the last minute of cooking.

    Ladle noodles, broth, and vegetables into bowls. Top with shredded chicken, halved soft-boiled eggs, and chopped green onions.
