- Napa cabbage1/4 head
- Chives2 tbsp, finely chopped
- Garlic1 clove, minced
- Ginger1 tsp, grated
- Soy sauce1 tbsp
- Sake1 tbsp
- Sesame oil1 tsp
- Gyoza wrappers24
- Vegetable oil2 tbsp
- Water1/2 cup
- Saltto taste
- Black pepperto taste

Finely chop the napa cabbage and mix with salt. Let it sit for 10 minutes, then squeeze out excess water.

In a bowl, combine ground pork, squeezed cabbage, chives, minced garlic, grated ginger, soy sauce, sake, sesame oil, salt, and pepper. Mix well until combined.

Place about 1 tablespoon of filling onto the center of a gyoza wrapper. Moisten the edge of the wrapper with water and fold it in half, pleating one side to seal.

Heat vegetable oil in a non-stick skillet over medium-high heat. Arrange the gyoza in a single layer and cook for 2-3 minutes until the bottoms are golden brown.

Carefully add 1/2 cup of water to the skillet, cover immediately, and steam for 5-7 minutes, or until the wrappers are tender and the filling is cooked through.

Remove the lid and let any remaining water evaporate. Cook for another minute until the bottoms are crispy again.

Serve hot with your favorite dipping sauce.
