  • Sugar (granulated or palm sugar)100g
  • Water200ml
  • Salt1/4 teaspoon
  • Vanilla extract (optional)1 teaspoon
  • Toasted sesame seeds (for garnish)1 tablespoon

    Peel and cube the sweet potatoes into bite-sized pieces.

    If using dried tapioca pearls, soak them in water according to package instructions (usually 15-30 minutes). Drain.

    In a pot, combine coconut milk, water, sugar, and salt. Heat over medium heat, stirring until sugar dissolves. Do not boil.

    Add the cubed sweet potatoes to the pot. Bring to a gentle simmer and cook for about 15-20 minutes, or until the sweet potatoes are tender but not mushy.

    Add the soaked and drained tapioca pearls to the pot. Continue to simmer for another 5-10 minutes, stirring occasionally, until the pearls are translucent and cooked through.
