Nguyên liệu
- Dried white beans (e.g., cannellini or navy beans)200g
- Glutinous rice150g
- Coconut milk400ml
- Water600ml
- Sugar150g
- Salt1/2 teaspoon
- Fresh pandan leaves5-6 leaves
Các bước
- 1
Soak the dried white beans overnight or for at least 8 hours. Drain and rinse.
- 2
Boil the beans in fresh water until tender (about 1-1.5 hours). Drain and set aside.
- 3
Rinse the glutinous rice thoroughly. Drain well.
- 4
Wash the pandan leaves, tie them into a knot, or cut them into large pieces. Blend them with about 100ml of the coconut milk until finely pureed. Strain the mixture to extract the pandan juice, discarding the solids. This will give the soup a subtle green tint and aroma.
- 5
In a pot, combine the cooked beans, rinsed glutinous rice, remaining coconut milk, 500ml of water, sugar, salt, and the pandan juice.
- 6
Bring to a boil over medium heat, stirring constantly.
- 7
Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the pudding has thickened. Stir occasionally.
- 8
Taste and adjust sugar if needed. The consistency should be thick and creamy.
- 9
Serve warm or chilled. Garnish with a small piece of fresh pandan leaf if desired.
