Prepare crispy pork: Cube pork belly, season with salt, roast until crispy. Cool and chop finely.

Make tapioca dough: Combine tapioca starch, 100ml water, and salt. Knead into a smooth dough.

Form dumplings: Fill small dough portions with crispy pork and seal.

Cook dumplings: Boil until they float (5-7 minutes). Drain and rinse.

Prepare durian broth: Blend fresh durian flesh with coconut milk until smooth. In a saucepan, heat the durian-coconut mixture with palm sugar and salt until sugar dissolves. Do not boil.

Combine: Add cooked dumplings to the warm durian broth. Simmer gently for 2-3 minutes.
