  • Coconut milk400ml
  • Water500ml
  • Sugar150g
  • Pandan extract1 tbsp
  • Salt1/4 tsp
  • Ripe mango, diced1 cup
  • Jackfruit, seeds removed and diced (optional)1/2 cup

    Prepare the base jelly mixture: Combine agar-agar powder with 100ml water, soak for 10 minutes. Add 400ml water, sugar, and salt. Boil, then simmer for 5 minutes. Remove from heat.

    Divide the mixture into three portions. To the first, add coconut milk. To the second, add pandan extract. Leave the third plain or add fruit puree.

    Pour the coconut milk mixture into the serving dish. Let it set slightly in the fridge (10-15 minutes).

    Sprinkle half of the diced mango (and jackfruit, if using) over the set coconut layer.

    Gently pour the pandan mixture over the fruit and coconut layer. Let it set slightly.

    Sprinkle the remaining diced fruit over the pandan layer.

    Pour the plain or fruit-infused mixture (if using a third flavor) over the fruit. Chill for at least 3 hours until fully set.
