Marinate pork chops: Mix 2 tbsp fish sauce, 1 tbsp sugar, 1 tsp black pepper, and 1 tsp minced garlic. Rub onto pork chops and let marinate for at least 30 minutes.

Prepare egg meatloaf: Soak dried wood ear mushrooms and glass noodles in warm water until softened. Drain and finely chop. In a bowl, combine ground pork, 2 eggs, chopped mushrooms, chopped noodles, 1 tbsp minced shallots, 1 tbsp fish sauce, 1 tsp sugar, 1/2 tsp salt, and 1/2 tsp black pepper. Mix well.

Steam egg meatloaf: Line a small rectangular steaming dish with parchment paper. Pour the meat mixture into the dish and spread evenly. Steam over medium heat for 20-25 minutes, or until cooked through. Let cool slightly, then slice.
