- Lemongrass, minced3 tbsp
- Garlic, minced2 tbsp
- Shallots, minced2 tbsp
- Fish sauce4 tbsp
- Sugar2 tbsp
- Honey1 tbsp
- Vegetable oil2 tbsp
- Shredded pork skin (Bì)1 cup
- Eggs4
- Cucumber1/2
- Pickled carrots and daikon (Đồ Chua)1/2 cup

Rinse broken rice thoroughly and cook according to package directions or by simmering in water until tender and fluffy.

In a bowl, combine minced lemongrass, garlic, shallots, fish sauce, sugar, honey, vegetable oil, salt, and pepper. Marinate pork chops in this mixture for at least 30 minutes, or preferably 2-4 hours in the refrigerator.

Grill the marinated pork chops over medium-high heat until cooked through and nicely charred on both sides, about 6-8 minutes per side.

While pork is grilling, fry eggs sunny-side up.

Slice the grilled pork chops if desired.

Assemble the dish: place a generous portion of broken rice on a plate. Top with sliced grilled pork chop, shredded pork skin, and a fried egg. Serve with pickled carrots and daikon, cucumber slices, and a side of nuoc cham dressing.
