- Jasmine rice, cooked and chilled4 cups
- Shrimp, peeled and deveined1 lb
- Garlic, minced3 cloves
- Eggs, lightly beaten2
- Carrots, finely diced1/2 cup
- Peas, frozen or fresh1/2 cup
- Green onions, chopped1/4 cup
- Fish sauce2 tbsp
- Soy sauce1 tbsp
- Vegetable oil3 tbsp
- Saltto taste
- Black pepperto taste

Heat 1 tbsp of vegetable oil in a large wok or skillet over medium-high heat. Add the beaten eggs and scramble until just cooked. Remove from wok and set aside.

Add another 1 tbsp of oil to the wok. Add minced garlic and stir-fry until fragrant, about 30 seconds.

Add the shrimp to the wok and cook until pink and opaque, about 2-3 minutes. Remove shrimp and set aside with the eggs.

Add the remaining 1 tbsp of oil to the wok. Add the diced carrots and peas, stir-fry for 2-3 minutes until tender-crisp.

Add the chilled cooked jasmine rice to the wok. Break up any clumps and stir-fry for 3-5 minutes until heated through and slightly toasted.

Pour in the fish sauce and soy sauce. Stir well to combine and coat the rice evenly.

Return the cooked shrimp and scrambled eggs to the wok. Add the chopped green onions. Stir-fry for another 1-2 minutes until everything is well combined and heated through.

Season with salt and black pepper to taste. Serve hot.
