- Chicken thighs, bone-in, skin-on1.5 kg
- Fresh lima beans (or frozen)400 g
- Shallots, minced3 tbsp
- Garlic, minced2 tbsp
- Fish sauce3 tbsp
- Sugar1 tbsp
- Black pepper1 tsp
- Water500 ml
- Vegetable oil2 tbsp
- Cilantro, for garnishsmall bunch

Cut chicken thighs into large, serving-sized pieces. If using fresh lima beans, blanch them briefly and peel. If using frozen, thaw them.

In a large bowl, marinate chicken with minced shallots, garlic, fish sauce, sugar, salt, and black pepper for at least 30 minutes.

Heat vegetable oil in a heavy-bottomed pot or Dutch oven over medium-high heat. Sear the chicken pieces until browned on all sides.

Add the marinated chicken and any remaining marinade to the pot. Pour in water.

Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, or until chicken is almost tender.

Add the lima beans to the pot. Continue to simmer, covered, for another 15-20 minutes, or until beans are tender and chicken is fully cooked. The sauce should thicken slightly.

Adjust seasoning with salt and pepper if needed. Garnish with fresh cilantro before serving.
