  • Sugar1 tsp
  • Black pepper, ground1/2 tsp
  • Saltto taste
  • Water500 ml
  • Scallions, chopped2 tbsp
  • Cilantro, fresh2 tbsp
  • Vegetable oil2 tbsp

    Prepare the chicken: Cut chicken thighs into bite-sized pieces. Marinate with 1 tbsp fish sauce, 1 tsp soy sauce, 1/2 tsp black pepper, and minced garlic. Let sit for 15 minutes.

    Prepare the mushrooms: If using dried shiitake, rehydrate them in warm water. Clean and trim fresh mushrooms. Slice shiitake mushrooms if large.

    Prepare aromatics: Mince ginger and garlic.

    Sear the chicken: Heat vegetable oil in a pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides. Remove chicken and set aside.

    Sauté aromatics: Add minced ginger to the pot and sauté until fragrant, about 1 minute.

    Simmer the stew: Return chicken to the pot. Add mushrooms, remaining fish sauce, soy sauce, sugar, salt, and water. Bring to a boil, then reduce heat, cover, and simmer for 30-40 minutes, or until chicken is tender.

    Adjust seasoning: Taste and adjust salt, fish sauce, or sugar as needed.
