A classic Bulgarian slow-cooked stew, traditionally made with lamb or pork, potatoes, and seasoned with savory herbs, cooked in a clay pot for a rich, tender result.

- Lamb shoulder or Pork shoulder1 kg
- Potatoes1 kg
- Onions3 large
- Garlic5 cloves
- Carrots2 medium
- Red bell pepper1 large
- Tomatoes400g
- Dry white wine200 ml
- Beef or Lamb broth500 ml
- Savory (Chubritsa)2 tbsp
- Black pepper1 tsp
- Saltto taste
- Vegetable oil3 tbsp

Cut the meat into large cubes. Peel and chop the potatoes, onions, carrots, and bell pepper into similar-sized pieces. Mince the garlic.

In a large clay pot or Dutch oven, heat the vegetable oil over medium-high heat. Brown the meat on all sides. Remove the meat and set aside.

Add the chopped onions to the pot and sauté until softened, about 5-7 minutes.

Add the garlic, carrots, and bell pepper, and cook for another 5 minutes.

Return the meat to the pot. Add the chopped potatoes, chopped tomatoes, dry white wine, and broth. Stir in the savory and season with salt and black pepper.

Bring the mixture to a simmer, then cover the pot tightly.

Transfer the pot to a preheated oven at 160°C (320°F) and bake for 3-4 hours, or until the meat and potatoes are very tender.
