A classic and comforting Bulgarian chicken soup, rich with tender chicken, vegetables, and a hint of lemon and dill. This is the authentic version, often prepared for special occasions or when feeling unwell.

Cut the whole chicken into pieces. Place in a large pot, cover with water, add salt, and bring to a boil. Skim off any foam.

Add the bay leaf and one whole peeled onion to the pot. Reduce heat and simmer for about 45-60 minutes, or until the chicken is cooked through.

Remove the chicken and onion from the pot. Strain the broth into a clean pot. Discard the onion and bay leaf.

While the chicken is cooling slightly, peel and dice the carrots, potatoes, and celery into small cubes. Mince the garlic.

Add the diced vegetables and minced garlic to the strained broth. Bring to a simmer and cook until the vegetables are tender, about 15-20 minutes.

Remove the skin and bones from the cooked chicken and shred or dice the meat. Add the chicken meat back to the soup.

In a small bowl, whisk together the egg yolk and the juice of half a lemon. Gradually temper this mixture into the soup by slowly adding a ladleful of hot broth while whisking constantly. Then, stir the tempered mixture back into the soup.

Stir in finely chopped fresh dill. Season with salt and black pepper to taste. Serve hot.
