- Arborio rice1 cup
- Yellow onions2 medium

- Fresh parsley1/2 cup chopped
- Fresh dill1/4 cup chopped
- White wine1/4 cup
- Olive oil1/4 cup
- Tomato paste2 tablespoons
- Lemon1/2, for juice

Clean the calamari tubes, reserving the tentacles if desired (chop finely for filling).

Finely chop 1 onion and mince the garlic. Sauté in 2 tablespoons of olive oil until softened.

Add the rice, chopped tentacles (if using), parsley, dill, white wine, and tomato paste to the pan. Cook for 2-3 minutes until the rice is lightly toasted and liquid is mostly absorbed.

Season the filling with salt and pepper. Let it cool slightly.

Carefully stuff the calamari tubes with the rice mixture, about 3/4 full. Secure the opening with a toothpick.

In a baking dish, combine the remaining chopped onion, remaining olive oil, lemon juice, salt, and pepper. Place the stuffed calamari on top.

Pour in 1 cup of water. Cover the dish with foil.

Bake in a preheated oven at 180°C (350°F) for 45-60 minutes, or until the calamari is tender and the rice is cooked through. Remove foil for the last 10 minutes if desired for browning.
