Clean the octopus thoroughly. If using frozen, thaw completely.

In a large pot, add the octopus and cover with water. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until tender. Drain and cut into bite-sized pieces.

While the octopus is cooking, peel and cut the potatoes into large chunks.

In a separate large pan or pot, heat olive oil over medium heat. Sauté chopped onion and minced garlic until softened.

Add tomato paste and cook for 1-2 minutes, stirring.

Add the cooked octopus pieces, potato chunks, red wine vinegar, bay leaf, salt, and pepper. Stir to combine.

Add enough water to almost cover the ingredients. Bring to a simmer, then cover and cook for 30-40 minutes, or until potatoes are tender and the sauce has thickened.

Remove the bay leaf. Stir in fresh chopped parsley.

Serve hot.
