  • Sirene cheese (Bulgarian feta)250g
  • Fresh spinach150g, finely chopped

  • Black sesame seeds for garnish1 tsp

    Activate yeast in warm water with sugar. Let it sit for 10 minutes until foamy.

    In a large bowl, combine flour and salt. Make a well in the center.

    Pour the activated yeast mixture into the well and gradually mix with the flour to form a soft dough.

    Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.

    Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.

    While the dough rises, crumble the sirene cheese. Finely chop the fresh spinach. Mix the cheese, spinach, and beaten egg in a bowl.

    Punch down the risen dough and divide it into 8 equal portions.

    Flatten each portion into a circle, place a spoonful of the spinach-cheese mixture in the center, and fold the dough to enclose the filling, forming a rustic patty.

    Place the kolaci on a greased baking sheet, leaving some space between them.

    Bake in a preheated oven at 200°C (400°F) for 20-25 minutes, or until golden brown and cooked through.
