
Traditional Bulgarian Stuffed Tomatoes with Sirene Cheese

- Large ripe tomatoes4
- Sirene cheese (Bulgarian white brine cheese)200g
- Rice (short-grain)100g
- Onion1 medium
- Fresh parsley1 bunch
- Fresh dill1/2 bunch
- Olive oil3 tbsp
- Water100ml
- Saltto taste
- Black pepperto taste

Preheat oven to 180°C (350°F).

Wash tomatoes. Cut off the tops and carefully scoop out the insides, reserving the pulp. Chop the onion finely.

Cook the rice until half-done. Sauté the chopped onion in olive oil until softened. Chop the fresh parsley and dill.

In a bowl, combine the crumbled sirene cheese, half-cooked rice, sautéed onion, chopped herbs, tomato pulp, salt, and pepper. Mix well.

Stuff the hollowed tomatoes generously with the cheese and rice mixture.

Place the stuffed tomatoes in a baking dish. Pour the 100ml of water into the bottom of the dish. Drizzle a little olive oil over the tomatoes.

Bake for 30-40 minutes, or until the tomatoes are tender and the filling is heated through and slightly golden.
