Prepare the dough: Whisk together flour and salt. Make a well in the center and add the egg and water. Mix until a shaggy dough forms, then knead on a floured surface for 5-7 minutes until smooth and elastic. Cover and let rest for 30 minutes.

Prepare the filling: Peel and finely chop the onions. Peel and boil the potatoes until tender, then mash them. Melt butter in a skillet over medium heat. Add onions and cook slowly, stirring occasionally, until deeply caramelized and golden brown (about 20-30 minutes).

Combine filling: Mix the mashed potatoes with the caramelized onions. Season with salt and pepper to taste.

Assemble the dumplings: Roll out the dough thinly on a floured surface. Cut out circles using a glass or cookie cutter. Place a teaspoon of filling in the center of each circle. Fold the dough in half to create a crescent shape, pressing the edges firmly to seal.

Cook the dumplings: Bring a large pot of salted water to a rolling boil. Carefully drop the dumplings into the boiling water, ensuring not to overcrowd the pot. Cook for 5-7 minutes after they float to the surface, or until the dough is cooked through.

Serve: Remove dumplings with a slotted spoon. Serve immediately, topped with sour cream and chopped fresh dill.
