In a bowl, mash the sirene cheese until smooth. Add yogurt, egg, salt, and mix well.

In a separate bowl, whisk together flour and baking powder.

Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Do not overmix.

Heat about 5 cm of vegetable oil in a deep pan to 170°C (340°F).

With floured hands, shape the dough into small doughnuts or balls. You can make a small indentation in the center of each.

Carefully fry the papanasi in batches until golden brown on all sides, about 3-4 minutes per batch.
