Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and pepper.

Place the duck breasts skin-side down in a cold, dry skillet. Turn the heat to medium-low and cook for 8-10 minutes, rendering the fat until the skin is golden brown and crispy. Pour off excess fat as it accumulates.

Flip the duck breasts and sear the meat side for 2-3 minutes for medium-rare. Adjust cooking time for desired doneness. Remove duck from pan and let rest.

While the duck rests, peel, core, and dice the apples. In the same skillet (with a little rendered duck fat), melt the butter over medium heat.

Add the diced apples, brown sugar, lemon juice, cinnamon stick, and 2 tbsp of water. Cook, stirring occasionally, for 8-10 minutes, until the apples are tender and slightly softened, forming a compote.
