
Classic Wild Boar Stew with Red Wine

- Dry red wine750 ml
- Onions2 large
- Carrots3 medium
- Celery stalks2

- Beef broth500 ml
- Olive oil3 tbsp
- All-purpose flour2 tbsp
- Saltto taste

Cut the wild boar meat into large cubes. Season generously with salt and pepper.

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the wild boar cubes in batches until browned on all sides. Remove meat and set aside.

Add chopped onions, carrots, and celery to the pot. Sauté until softened, about 8-10 minutes.

Add minced garlic and tomato paste, cook for another minute until fragrant.

Sprinkle flour over the vegetables and stir to coat. Cook for 1-2 minutes.

Pour in the red wine, scraping the bottom of the pot to deglaze. Bring to a simmer and cook for 5 minutes to reduce slightly.

Return the wild boar meat to the pot. Add beef broth, bay leaves, thyme, and rosemary. Ensure the meat is mostly submerged. Add water if needed.

Bring the stew to a simmer, then reduce heat to low, cover, and cook for at least 2.5 to 3 hours, or until the wild boar is very tender. Stir occasionally.

Remove bay leaves and herb sprigs. Adjust seasoning with salt and pepper if necessary. Serve hot.
