
Traditional Sach with Pork and Vegetables

A classic Bulgarian Sach featuring tender pork and a medley of fresh vegetables, all cooked together on a cast-iron plate (sach) until perfectly tender and slightly charred. This dish is hearty, flavorful, and a true taste of Bulgarian home cooking.

Cut the pork shoulder into bite-sized cubes.

Slice the onions, bell peppers, tomatoes, and zucchini into thick pieces. Mince the garlic.

Heat the olive oil in a cast-iron sach or a large, heavy skillet over medium-high heat.

Add the pork cubes to the hot sach and sear until browned on all sides.

Add the sliced onions and bell peppers to the sach and cook for 5-7 minutes until they begin to soften.

Stir in the tomatoes, zucchini, minced garlic, red pepper flakes, salt, and black pepper. Cook for another 10-15 minutes, stirring occasionally, until the vegetables are tender and the pork is cooked through.

If the mixture becomes too dry, add a splash of water.

Garnish with fresh parsley before serving directly from the sach.
