A traditional Bulgarian banitsa, a savory pastry made with layers of filo dough, a filling of sirene cheese, eggs, and yogurt, baked until golden and flaky.

- Filo dough1 package (approx. 500g)
- Sirene cheese400g
- Eggs3 large
- Plain yogurt150g
- Butter, melted100g
- Vegetable oil50ml
- Salt1/2 teaspoon
- Black pepper1/4 teaspoon

Preheat oven to 180°C (350°F). Grease a round baking dish.

Crumble the sirene cheese into a bowl. Add the eggs, yogurt, salt, and pepper. Mix well until combined.

Lay out one sheet of filo dough. Brush lightly with a mixture of melted butter and vegetable oil.

Spread a thin layer of the cheese mixture over the filo sheet.

Repeat with remaining filo sheets and cheese mixture, layering them in the baking dish. You can also fold or roll the filo sheets before layering for a different texture.

Brush the top layer generously with the butter and oil mixture.

Bake for 30-40 minutes, or until the banitsa is golden brown and crispy.
