- Beef chuck roast800 g
- Onions2 medium
- Mushrooms (cremini)250 g
- Garlic3 cloves
- Beef broth600 ml
- Sour cream150 ml
- All-purpose flour2 tbsp
- Butter2 tbsp
- Vegetable oil1 tbsp
- Bay leaf1
- Saltto taste
- Black pepperto taste
- Fresh dillfor garnish

Cut beef into 1.5-inch cubes. Season with salt and pepper.

Heat oil and 1 tbsp butter in a pot over medium-high heat. Brown beef in batches. Remove and set aside.

Add remaining 1 tbsp butter to the pot. Add sliced mushrooms and cook until browned. Remove and set aside.

Add chopped onions to the pot and cook until softened, about 5-7 minutes.

Add minced garlic and cook for 1 minute.

Sprinkle flour over the onions and stir to coat. Cook for 1-2 minutes.

Gradually whisk in beef broth, scraping up browned bits.

Return beef to the pot. Add bay leaf. Bring to a simmer.

Cover, reduce heat, and simmer for 1.5 hours, or until beef is tender.

Stir in the cooked mushrooms. Simmer for another 10 minutes.

Remove from heat. Stir in sour cream. Do not boil after adding sour cream.

Season with salt and pepper to taste. Garnish with fresh dill. Serve hot.
