- leeks, white and light green parts2

Preheat oven to 180°C (350°F). Grease a baking dish.

Wash and finely chop the leeks. Sauté leeks in 1 tbsp oil until softened, about 5-7 minutes.

Add the spinach to the pan with the leeks. Cook until the spinach is wilted, then drain any excess liquid.

Crumble the sirene cheese into a bowl. Add the sautéed leeks and spinach, eggs, salt, and pepper. Mix well.

Layer 6 sheets of phyllo dough in the baking dish, brushing each with a mixture of melted butter and oil.

Spread the spinach-leek-cheese mixture evenly over the layered phyllo.

Layer the remaining 6 sheets of phyllo dough on top, brushing each with the butter and oil mixture.

Tuck the edges and score the top layer into portions.

Bake for 35-45 minutes, or until golden brown and puffed.
