A classic Balkan burger made from a mixture of ground meats, seasoned and grilled to perfection. Served traditionally with ajvar and onions.

- Ground pork250g
- Ground lamb250g
- Onion, finely chopped1 medium
- Garlic, minced2 cloves
- Sparkling water50ml
- Salt1.5 tsp
- Black pepper1 tsp

In a large bowl, combine ground beef, pork, and lamb. Add finely chopped onion and minced garlic.

Season with salt and black pepper. Mix thoroughly with your hands until well combined.

Gradually add sparkling water while continuing to mix. This helps tenderize the meat.

Cover the bowl and refrigerate for at least 30 minutes (or up to 2 hours) to allow flavors to meld.

Divide the mixture into 4 equal portions and shape them into flat, round patties, about 2 cm thick.

Preheat a grill or grill pan to medium-high heat. Lightly oil the grill grates.

Grill the pljeskavica for 5-7 minutes per side, or until cooked through and nicely browned with grill marks.

Serve hot, traditionally with ajvar, onions, and somun bread (optional).
