
Quick Banitsa with Store-Bought Phyllo Dough

A simplified version of the traditional banitsa, using readily available store-bought phyllo dough for a quicker preparation. The classic sirene cheese and egg filling remains, offering a delicious taste with less effort.

- Store-bought phyllo dough1 package (approx. 450g)
- Sirene cheese (or Feta)300g
- Eggs2 large
- Plain yogurt50g
- Butter, melted80g
- Vegetable oil20ml

Preheat oven to 180°C (350°F). Grease a baking dish.

Prepare the filling: Crumble the sirene cheese. Whisk eggs with yogurt and mix with the cheese.

Unroll the phyllo dough. Layer 2-3 sheets at a time in the baking dish, brushing each layer with melted butter and a little oil.

Spread the cheese filling evenly over the layered phyllo dough.

Cover the filling with the remaining phyllo sheets, brushing each layer with butter and oil.

Tuck in the edges and brush the top generously with butter.

Bake for 30-35 minutes, or until golden brown and crisp.
