
Banitsa with Spinach and Leeks

- Vegetable oil40ml

- Sirene cheese300g
- Eggs2 large
- Fresh spinach, chopped200g
- Leeks, thinly sliced (white and light green parts)1 large
- Butter, melted90g

Make the dough: Combine flour, water, 1 tbsp oil, and salt. Knead until smooth. Let rest for 30 minutes. Divide into 6-8 portions, oil, and rest again.

Sauté the leeks in 1 tbsp oil until softened. Add the chopped spinach and cook until wilted. Let cool.

Prepare the filling: Crumble sirene cheese. Whisk eggs and mix with cheese, cooled leek-spinach mixture.

Stretch the dough portions as thinly as possible. Layer in a greased baking dish, brushing each sheet with melted butter.

Spread the spinach-leek-cheese filling evenly over the dough layers.

Cover with remaining dough sheets, brushing each with butter. Fold edges and brush top.

Bake at 190°C (375°F) for 35-45 minutes until golden and crisp.
