- Plain yogurt200g
- Fresh mint1/4 cup, chopped
- Fresh dill1/4 cup, chopped
- Garlic5 cloves, minced
- Lemon zest1 tbsp
- Olive oil2 tbsp

Marinate the lamb: In a bowl, combine yogurt, chopped mint, dill, minced garlic, lemon zest, olive oil, salt, and pepper. Rub this mixture all over the lamb leg.

Refrigerate: Cover the lamb and refrigerate for at least 4 hours, or preferably overnight.

Preheat oven to 170°C (340°F).

Roast the lamb: Place the lamb leg in a roasting pan. Roast for approximately 3 to 3.5 hours, or until the internal temperature reaches 75°C (167°F).

Baste: Baste the lamb with pan juices every 45 minutes.

Rest and serve: Let the lamb rest for 20 minutes before carving. Garnish with fresh herbs and serve with a dollop of yogurt sauce if desired.
