Preheat your oven to 200°C (400°F).

Clean the mackerel, remove the guts, and rinse them thoroughly. Pat dry with paper towels.

Slice the lemon thinly. Chop half of the parsley and set the other half aside for garnish.

Make a few shallow slits on each side of the mackerel.

Stuff the cavity of each mackerel with lemon slices and chopped parsley.

Drizzle the mackerel with olive oil, and season generously with salt and black pepper, both inside and out.

Place the mackerel on a baking sheet or in a baking dish.

Bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.

Garnish with fresh parsley sprigs and serve immediately with extra lemon wedges.
