Preheat oven to 200°C (400°F).

Rinse the trout and pat dry.

Season the inside and outside of the trout with salt and pepper.

Stuff the cavity of each trout with lemon slices, dill sprigs, and parsley sprigs.

Drizzle the trout with olive oil.

Place each trout on a large piece of aluminum foil. Drizzle with a little more olive oil.

Wrap the foil tightly around each trout to create a sealed packet.

Place the foil packets on a baking sheet.

Bake for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
