- Fresh mussels1.5 kg
- Dry white wine200 ml
- Chorizo100 g, diced
- Canned diced tomatoes200 g
- Garlic3 cloves, minced
- Olive oil1 tbsp
- Fresh parsley1/4 cup, chopped
- Saltto taste
- Black pepperto taste
- Water50 ml

Clean the mussels, scrubbing and de-bearding.

Mince the garlic.

In a large pot, heat olive oil over medium heat. Add the diced chorizo and cook until it renders some of its fat, about 3-4 minutes.

Add the minced garlic and sauté for 1 minute until fragrant.

Stir in the diced tomatoes (with their juice), white wine, and water. Bring to a simmer.

Add the cleaned mussels to the pot. Cover and cook for 5-7 minutes, until the mussels have opened. Discard any unopened mussels.

Stir in the chopped parsley. Season with salt and black pepper to taste, keeping in mind the saltiness of the chorizo.

Serve hot, ensuring each serving gets plenty of broth, tomatoes, and chorizo.
