- Sirene cheese (Bulgarian feta-style)200g
- Sunflower oil3 tablespoons
- Red wine vinegar1 tablespoon
- Fresh parsley2 tablespoons, chopped

Roast the red bell peppers until the skin is charred and blistered. You can do this on an open flame, under a broiler, or in a hot oven.

Place the roasted peppers in a bowl and cover with plastic wrap or a lid for about 10-15 minutes to steam. This makes peeling easier.

Peel the peppers, remove the stems and seeds, and cut them into strips.

In a serving bowl, combine the pepper strips with crumbled sirene cheese.

Whisk together sunflower oil and red wine vinegar. Season with salt and black pepper to taste.
