- Jarred Roasted Red Peppers1 jar (approx. 12 oz)
- Garlic2 cloves
- Olive Oil3 tablespoons
- Lemon Juice1 tablespoon
- Fresh Parsley1 tablespoon, chopped
- Saltto taste
- Black Pepperto taste

Drain the jarred roasted eggplant and roasted red peppers. If the eggplant is in large pieces, roughly chop them.

In a bowl, combine the drained eggplant and peppers, minced garlic, olive oil, and lemon juice. You can pulse briefly in a food processor for a smoother texture or chop finely by hand.
