  • Jarred Roasted Red Peppers1 jar (approx. 12 oz)
  • Garlic2 cloves
  • Olive Oil3 tablespoons
  • Lemon Juice1 tablespoon
  • Fresh Parsley1 tablespoon, chopped
  • Saltto taste
  • Black Pepperto taste

    Drain the jarred roasted eggplant and roasted red peppers. If the eggplant is in large pieces, roughly chop them.
