    Roast the red bell peppers until the skin is charred and blistered. You can do this under a broiler, on a grill, or directly over a gas flame. Place them in a bowl and cover with plastic wrap to steam for about 10-15 minutes.

    Once cooled enough to handle, peel the skin off the peppers, remove the seeds and stems. Roughly chop the roasted peppers.

    Crumble the sirene cheese into a bowl. Add the chopped roasted peppers and minced garlic.

    Add olive oil, salt, and black pepper to taste. Mix everything together thoroughly. For a smoother consistency, you can pulse it a few times in a food processor, but traditional versions are often hand-mixed for a chunkier texture.

    Serve as a spread or dip, garnished with a drizzle of olive oil and fresh parsley.
