Cook the rice in salted water until tender, then drain well.

Wash and finely chop the fresh spinach. Blanch briefly if desired, then squeeze out excess water.

Crumble the sirene cheese into a bowl. Add the cooked rice, chopped spinach, chopped dill and parsley, beaten eggs, yogurt, melted butter, salt, and pepper. Mix well.

Preheat oven to 180°C (350°F).

Prepare the filo pastry base as described in the traditional recipe, brushing each layer with butter.

Spread the spinach and cheese mixture evenly over the filo base.

Cover with buttered filo pastry sheets.

Score the top pastry into serving portions.
