- Cucumber1 large
- Red Onion1/2 medium
- Fresh Parsley1 bunch
- Sunflower Oil100 ml
- White Wine Vinegar50 ml
- Saltto taste

Boil the potatoes in their skins until tender. Let them cool slightly, then peel and cut into bite-sized cubes.

Dice the cucumber and finely chop the red onion.

Chop the fresh parsley.

In a large bowl, combine the cubed potatoes, diced cucumber, chopped red onion, and most of the chopped parsley (reserve some for garnish).

In a separate small bowl, whisk together the sunflower oil, white wine vinegar, salt, and pepper to make the dressing.

Pour the dressing over the salad and gently toss to combine. Ensure all ingredients are coated.

Garnish with the remaining fresh parsley. Let the salad sit for at least 15 minutes before serving to allow the flavors to meld.
