- Smoked bacon150 g
- Sirene cheese (Bulgarian white brine cheese)250 g
- Eggs3 large
- Dried mint1 tbsp
- Butter or oil2 tbsp
- Saltto taste
- Black pepperto taste
- Fresh parsley for garnish (optional)1 tbsp

Preheat oven to 190°C (375°F).

Finely chop the bacon and cook in a skillet until crispy. Remove bacon bits, leaving rendered fat in the skillet. Set bacon aside.

Clean and thinly slice the leeks. Sauté the leeks in the bacon fat (or add butter/oil if needed) until softened, about 5-7 minutes.

Peel and coarsely grate the potatoes. Squeeze out excess liquid.

Crumble the sirene cheese into a large bowl. Add grated potatoes, sautéed leeks, eggs, dried mint, salt, pepper, and the cooked bacon bits. Mix well.

Grease a baking dish or cast-iron skillet. Pour the mixture in and spread evenly.

Bake for 40-50 minutes, until golden brown and set. If using fresh parsley, sprinkle on top after baking.
