  • Onions2 large
  • Garlic4 cloves
  • Cilantro1 bunch
  • Parsley1/2 bunch
  • Ground coriander1 tsp
  • Utskho-suneli (blue fenugreek)1 tsp
  • Red pepper flakes1/2 tsp
  • Vegetable oil3 tbsp
  • Saltto taste
  • Black pepperto taste
  • Wateras needed

    Soak kidney beans in water overnight. Drain and rinse.

    Boil beans in fresh water until tender, about 1.5-2 hours. Drain, reserving some cooking liquid.

    Finely chop onions and sauté in vegetable oil until golden brown.

    Add minced garlic, ground coriander, utskho-suneli, and red pepper flakes to the onions. Cook for 1 minute until fragrant.

    Mash about half of the cooked beans with a fork or potato masher.

    Combine the mashed beans, whole beans, sautéed onion mixture, chopped cilantro, and chopped parsley in a pot. Add reserved bean cooking liquid or fresh water to reach desired stew consistency.

    Simmer gently for at least 30 minutes, allowing flavors to meld. Season with salt and black pepper to taste.

    Serve hot, garnished with extra fresh cilantro.
