- Canned white beans (e.g., Cannellini or Great Northern)2 cans (approx. 400g each)
- Onion1 medium
- Garlic2 cloves
- Diced tomatoes (canned)1 can (400g)
- Vegetable broth2 cups
- Mint (dried)1/2 tsp
- Savory (dried)1/2 tsp
- Paprika1/2 tsp
- Olive oil2 tbsp
- Wateras needed

Drain and rinse the canned beans.

Chop the onion and mince the garlic.

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute until fragrant.

Stir in the diced tomatoes (undrained), vegetable broth, dried mint, dried savory, and paprika. Bring to a simmer.

Add the rinsed beans to the pot. Season with salt and black pepper.

Cover and simmer for at least 20-30 minutes, allowing the flavors to meld. Add a little water if the stew becomes too thick.
