  • Carrots2 medium
  • Celery stalks2
  • Garlic cloves4
  • Tomato paste2 tbsp
  • Vegetable broth6 cups
  • Bay leaf2
  • Dried mint1 tsp
  • Olive oil3 tbsp
  • Saltto taste
  • Black pepperto taste

    Rinse the lentils thoroughly.

    Finely chop the onion, carrots, and celery. Mince the garlic.

    Heat olive oil in a large pot or Dutch oven over medium heat. Sauté the onion, carrots, and celery until softened, about 8-10 minutes.

    Add the minced garlic and tomato paste, cook for another minute until fragrant.

    Stir in the rinsed lentils, vegetable broth, bay leaves, and dried mint.

    Bring to a boil, then reduce heat, cover, and simmer for 60-75 minutes, or until lentils are tender. Stir occasionally.

    Remove bay leaves. Season with salt and black pepper to taste.
