- Red lentils1.5 cups
- Onion1 medium
- Garlic cloves2
- Vegetable broth5 cups
- Olive oil2 tbsp
- Paprika1 tsp
- Saltto taste
- Black pepperto taste

Rinse the red lentils.

Finely chop the onion and mince the garlic.

Heat olive oil in a pot over medium heat. Sauté the onion until translucent, about 5 minutes. Add garlic and cook for 1 minute more.

Add the rinsed lentils, vegetable broth, and paprika. Stir well.

Bring to a boil, then reduce heat and simmer, uncovered, for 25-30 minutes, or until lentils are very soft and have broken down. Stir occasionally.

Season with salt and black pepper to taste. If desired, use an immersion blender to partially blend for a smoother texture.
