
Classic Spinach with Rice (Spanak me Oryz)

A traditional Greek dish featuring tender spinach and fluffy rice simmered together with aromatic herbs and lemon. This is a comforting and healthy vegetarian staple.

- Fresh spinach1 kg
- Arborio rice200 g
- Onion1 large
- Garlic3 cloves
- Vegetable broth500 ml
- Olive oil4 tbsp
- Lemon1
- Fresh dill1/2 bunch
- Fresh parsley1/2 bunch
- Saltto taste
- Black pepperto taste

Wash and roughly chop the spinach. Finely chop the onion and mince the garlic.

Heat olive oil in a large pot or Dutch oven over medium heat. Sauté the chopped onion until softened, about 5-7 minutes.

Add the minced garlic and cook for another minute until fragrant.

Stir in the Arborio rice and toast for 1-2 minutes until the edges become slightly translucent.

Add the chopped spinach to the pot. It will seem like a lot, but it will wilt down.

Pour in the vegetable broth, the juice of half a lemon, and season with salt and black pepper.

Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the rice is tender and most of the liquid is absorbed. Stir occasionally.

Stir in the chopped fresh dill and parsley. Adjust seasoning if needed.

Let it rest for 5 minutes before serving. Serve warm, garnished with extra herbs and a lemon wedge.
