- Carrots1 cup, diced
- Peas1 cup, frozen or fresh
- Corn kernels1 cup, frozen or fresh
- Onion1 medium, chopped
- Garlic2 cloves, minced
- Olive oil2 tablespoons
- Fresh parsley1/4 cup, chopped

Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5 minutes.

Stir in the Arborio rice and toast for 1-2 minutes, stirring constantly, until the edges of the grains look slightly translucent.

Add diced carrots, peas, and corn kernels to the pot. Stir to combine.

Pour in the vegetable broth. Season with salt and black pepper.

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed. Stir occasionally to prevent sticking.
