Classic Bulgarian stuffed zucchini, where hollowed-out zucchini are filled with a savory mixture of minced meat, rice, onions, and spices, then baked in a rich tomato-based sauce. A comforting and traditional main course.

- Onion1 large
- Rice (short-grain)100g
- Tomato paste2 tbsp
- Vegetable oil3 tbsp
- Water200ml
- Saltto taste
- Black pepperto taste

Wash zucchini, cut in half lengthwise, and scoop out the seeds and some flesh to create a hollow. Chop the scooped-out zucchini flesh finely.

Finely chop the onion. Sauté the onion in 2 tbsp of vegetable oil until softened. Add the chopped zucchini flesh and cook for another 5 minutes.

Add the ground meat to the pan with the onions and zucchini. Cook, breaking up the meat, until browned. Drain any excess fat.

Stir in the uncooked rice, tomato paste, salt, and pepper. Cook for 2-3 minutes, stirring constantly.

Preheat oven to 180°C (350°F).

Stuff the hollowed-out zucchini halves generously with the meat and rice mixture.

Arrange the stuffed zucchini in a baking dish. Pour the water and remaining 1 tbsp of oil into the dish. You can add a little more water if needed to come halfway up the sides of the zucchini.

Cover the baking dish with foil and bake for 45-50 minutes, or until the zucchini is tender and the rice is cooked.

Remove foil and bake for another 10-15 minutes to lightly brown the top.

Garnish with fresh parsley before serving.
