  • Roasted Red Peppers (jarred or homemade)200 g
  • Yogurt (thick)400 g
  • Garlic3 cloves
  • Eggs1
  • Parsley1/4 bunch
  • Olive oil3 tbsp
  • Saltto taste
  • Black Pepperto taste

    Preheat oven to 200°C (400°F).

    Slice zucchini into 1 cm rounds. Toss with 1 tbsp olive oil, salt, and pepper.

    Arrange half the zucchini slices in a baking dish. Top with sliced roasted red peppers.

    Layer the remaining zucchini slices over the peppers.

    Bake for 25 minutes until zucchini is tender.

    While baking, prepare the sauce: mince garlic, chop parsley. Whisk yogurt, egg, minced garlic, 1 tbsp olive oil, salt, and pepper.

    Pour the yogurt mixture over the zucchini and peppers.

    Bake for another 15-20 minutes until the topping is set and golden.
