- Roasted Red Peppers (jarred or homemade)200 g
- Yogurt (thick)400 g
- Garlic3 cloves
- Eggs1
- Parsley1/4 bunch
- Olive oil3 tbsp
- Saltto taste
- Black Pepperto taste

Preheat oven to 200°C (400°F).

Slice zucchini into 1 cm rounds. Toss with 1 tbsp olive oil, salt, and pepper.

Arrange half the zucchini slices in a baking dish. Top with sliced roasted red peppers.

Layer the remaining zucchini slices over the peppers.

Bake for 25 minutes until zucchini is tender.

While baking, prepare the sauce: mince garlic, chop parsley. Whisk yogurt, egg, minced garlic, 1 tbsp olive oil, salt, and pepper.

Pour the yogurt mixture over the zucchini and peppers.
