Traditional Bulgarian lentil patties, pan-fried to a golden crisp. These are hearty, flavorful, and a staple vegetarian dish.

- Brown lentils2 cups
- Onion1 medium
- Garlic2 cloves
- Fresh parsley1/2 cup, chopped
- Egg1 large
- Breadcrumbs1/2 cup
- Olive oil3 tablespoons
- Salt1 teaspoon
- Black pepper1/2 teaspoon

Cook lentils according to package directions until tender. Drain well and mash lightly.

Finely chop the onion and mince the garlic. Chop the fresh parsley.

In a large bowl, combine mashed lentils, chopped onion, minced garlic, chopped parsley, egg, and breadcrumbs. Season with salt and pepper.

Mix well until all ingredients are incorporated and the mixture holds together. If too wet, add more breadcrumbs; if too dry, add a splash of water.

Form the mixture into small, flattened patties (about 2-3 inches in diameter).

Heat olive oil in a large skillet over medium heat.

Carefully place the patties in the hot skillet and cook for 4-5 minutes per side, until golden brown and heated through.
