  • All-purpose flour100 g
  • Breadcrumbs200 g
  • Eggs2
  • Vegetable oil for frying1 liter

    Boil potatoes until tender, then drain and mash them thoroughly.

    In a saucepan, heat milk and butter until butter is melted. Pour into mashed potatoes and mix until smooth.

    Stir in egg yolks, salt, and pepper. Let the mixture cool completely.

    Shape the cooled potato mixture into small cylinders or balls.

    Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

    Roll each croquette first in flour, then dip in beaten egg, and finally coat thoroughly with breadcrumbs.

    Heat vegetable oil in a deep pot or fryer to 180°C (350°F).

    Fry the croquettes in batches until golden brown and crispy. Drain on paper towels.
